SPANISH STYLE EGGS
Ingredients
- 225g minced beef
- 2 Tbsp olive oil
- 2 garlic cloves, crushed
- 1 chopped onion
- 400g tin chopped tomatoes
- 1/2 red pepper, deseeded and diced
- 2 courgettes grated
- 1 Tbsp tomato puree
- 1 tsp chilli powder
- 1 tsp smoked paprika
- 4 whole eggs
Method
- Preheat oven to 180c (160 fan)
- In a large saucepan heat oil and add the onion and garlic. Fry for 5 mins over medium heat until soft. Add beef and cook until starting to brown.
- Stir in tomatoes, pepper, courgettes, puree and spices. Cook for 20 minutes. Spoon into 4 ramekins.
- Break an egg in each. Bake in oven 5-10 minutes.
Serve immediately.
